The people behind the Port of Leith Distillery aim to open for business this summer, touting the development as the biggest tourist attraction to be built in Leith for decades, with a projected 25,000 visitors in its first year, increasing to 160,000 by 2025.

The international business graduate from Glasgow Caledonian University, described as one of Scotland’s ‘most exciting young marketing brains’, is delighted to have been recognised among some of the country’s top hospitality newcomers.

The bistro, named after a small village in Wester Ross, opened in 2003, and has since built up a solid customer base in the neighbourhood for an ever-changing menu full of ‘interesting & robust flavours’.

Bruce MacGregor explained: “We’ve tried to tailor the menu so people identify with the characters of the cocktails. The promos come with the question: ‘Which one are you? ‘The Romantic’, ‘The Adventurer’, ‘The Gael’, ‘The Philosopher’ or ‘The Beast’?”
