Herbie More’s cocktail bar opens in Hilton Edinburgh Carlton 

Herbie More’s Cocktails & Kitchen within the Hilton Edinburgh Carlton

New destination bar Herbie More’s Cocktails & Kitchen has opened within the Hilton Edinburgh Carlton.

In a nod to the site’s cultural heritage, the 65-cover bar is named after Herbert More, conductor of the Palm Court Orchestra at the Patrick Thomson’s department store, which stood in that North Bridge spot from 1905 to 1984.

‘Herbie’ famously brought theatre and flair to his performances at Patrick Thomson’s for nearly four decades – and his namesake venue aims to channel that same spirit with a ‘vibrant atmosphere, creative cocktails and elegant interiors’, designed by Cunningham McLean.

Hilton Edinburgh Carlton has recently undergone a comprehensive £20 million extension, reconfiguration and refurbishment following investment from private real estate investment fund manager Henderson Park, and its in-house hospitality operator and asset manager, Klarent Hospitality.

The hotel now features a new breakfast room, executive lounge, two meeting rooms, an extended lobby and fitness suite, as well as 58 new bedrooms.

By the end of the year, a further 28 bedrooms will be created on a new rooftop level, bringing the Carlton’s total to a useful 297 bedrooms.

As part of this enhanced offer, Herbie More’s is designed both as a destination for guests and a draw for locals.

The drinks menu showcases a range of cocktails, some incorporating its own Conductor’s Batch Gin brand, made just a mile away at Summerhall Distillery.

Alongside this, a selection of fine and rare malt whiskies will be on offer, and guests will have the opportunity to have their own lockable whisky cabinet, with a specially selected whisky exclusive to them and their friends and family.
