Dunblane Hydro’s partnership with Nick Nairn comes to an end

Chef Nick Nairn has led the Kailyard Restaurant since its launch 16 years ago

Chef Nick Nairn’s long association with the Dunblane Hydro is coming to an end.

In a joint announcement, the celebrity chef and the venue, which recently reopened as the Apex Dunblane Hydro, said that their ‘successful partnership’ of 16 years standing would come to an end, by mutual agreement, in March 2026.

Nairn has been at the helm of the Kailyard Restaurant at Dunblane Hydro Hotel since its launch, playing a ‘defining role’ in shaping the restaurant’s reputation for outstanding Scottish cuisine and celebration of local produce.

“This mutual decision comes as Apex Hotels reimagines the future of the restaurant with a refined concept, new name and fresh new fresh look, aligned with its long-term vision for the hotel,” read the statement.

Nairn himself intends to refocus on Nick’s and the Nick Nairn Cook School in Port of Menteith.

“I’m very proud of all the Kailyard has achieved,” said Nairn. “However, it’s time for me to focus exclusively on the restaurant and cook school in Port of Menteith.

“I wish only the best for the Dunblane Hydro and the team. I’ll be a very interested onlooker as Apex invests in and improves the hotel I believe it’s in good hands and I look forward to visiting as a guest.”

Brian Scanlin, who has worked alongside Nairn at the Kailyard for many years, will remain as its Executive Head Chef, bringing continuity and ‘new creative direction’ as the offering evolves.

To mark Nairn’s contribution to the Dunblane Hydro and the wider Scottish food scene, a farewell event will be held on Thursday 26th March, ‘giving colleagues, partners and friends the opportunity to celebrate his leadership, creativity and lasting impact’.

Area general manager for Apex Dunblane Hydro, Paul Mooney, said: “Nick’s influence on the Kailyard and on the wider food scene in central Scotland has been remarkable.

“Over the last 16 years, he has helped build a restaurant that is respected and known for its commitment to quality and Scottish produce. I would like to thank Nick sincerely for everything he has contributed to Dunblane Hydro and wish him every success in the next chapter on behalf of Apex Hotels.”

The changes at the restaurant are part of a multi-million-pound refurbishment of Apex Dunblane Hydro, encompassing bedrooms, public spaces, leisure facilities, and conference and event areas.

Mooney continued: “As we embark on an exciting new era for the hotel, the evolution of our restaurant is a key part of our wider vision. With Brian remaining as Executive Head Chef and a new concept in development, there is a great deal to look forward to.”

Apex Hotels will announce the new restaurant name, new menus and design directions in early 2026, as part of the wider relaunch of the venue.
