The Maison Bleue restaurant name is to expand in Edinburgh for the first time with a new venue in Morningside.
Father and daughter duo, Dean and Layla Gassabi, who have run their original eatery in the city’s old town for 18 years, searched for premises for a “considerable” time before taking on the Morningside Road unit. The Gassabis have ambitious plans for the new 45-cover Maison Bleue Le Bistrot, which was due to open as SLTN went to press. Dean said the new eatery will “tip its hat” to the original in terms of styling, while being “different and distinctive in its own right”.
“When this opportunity came on the market we knew it was perfect for us,” he said.
“This is a major investment for us and comes just a year after the extensive refurbishment of our Victoria Street restaurant – which is a real sign of our confidence in the Maison Bleue name and brand.”
