“Built for my mate Iain ‘Wooshie’. We lost him, but he’s still behind every shift.

We worked together when I was learning the trade. He was chaos in the best way: loud, happy, and always up for it.

“Back then it was Wray & Nephew and late shifts.

This is that energy, shaped into something balanced, but still with a bit of bite. Split-base with rum at the core, lifted with grapefruit and pineapple.

Ended up dangerously drinkable.

Slàinte, lad!”

86’d Not Forgotten:

• 30ml Wray & Nephew White Overproof Rum

• 15ml Malfy Rosa Pink Grapefruit Gin

• 35ml pineapple juice

• 20ml fresh lime juice

• 8ml brown sugar syrup (2:1, pinch sea salt)

• 2 dashes orange bitters

• Pineapple leaf and straw to garnish.
