Seamill Hydro launches nautical new look with Tides and Sirens

Ayrshire’s RAD Hotel Group has unveiled its new twin destination venues – Tides restaurant and Sirens cocktail lounge, both within its Seamill Hydro in West Kilbride.

Completing a period of redesign and refurbishment at the Ayrshire coast venue, the Hydro’s new food and drink offering gives guests everything from contemporary all-day Scottish dining from the land and shore and afternoon teas, to Champagne by the glass, signature cocktails, and small plates, all with sweeping sea views of the Firth of Clyde.

Tides, the hotel’s new 180-cover all-day dining restaurant, promises modern Scottish flavours, with a kitchen brigade led by head chef Andrew Heaney, who has crafted a locally sourced menu full of classic dishes and signature showstoppers, such as the made-for-sharing Scottish seafood two-tier tower.

Guests can also expect individual beef Wellingtons, chimichurro-grilled chicken, extensive seafood options, coal-roasted chargrilled meats and burgers, alongside classic pies, seasonal starters, and indulgent desserts.

One of Tides’ most distinctive design features is its custom-designed underwater mythical mural, an artwork which complements the venue’s soft, coastal-inspired colour palette.

Tides has, in fact, been designed to give guests ‘a unique experience each time they visit’, with interiors that mirror the movement of water, as the day or night goes by.

“From crashing waves during breakfast to sunset-lit dinners, the changing tides of the Firth of Clyde provide sweeping views and an ambience you won’t find anywhere else,” said RAD’s launch statement.

Sirens, the Hydro’s new intimate Champagne and cocktail lounge, is adjacent to Tides, and accessed through an illuminated archway that opens into a ‘stylish, speakeasy-inspired’ space.

Open from noon until late, with atmospheric lighting and elegant architectural features, Sirens offers a curated selection of classic cocktails, from a Neptune Gin Martini to Spritzes, alongside inventive signature serves.

House cocktails include Siren Song, a floral mix of Ketel One, Sarti Rosa, cranberry, elderflower, and raspberry foam; a fresh Mermaid’s Margarita enhanced with coconut water and edible pearl dust; and the Cherry Noir, made with Disaronno Amaretto, Buffalo Trace, cherry syrup, chocolate bitters, lemon and aquafaba.

Guests will also find Laurent-Perrier Champagne by the glass, with the option to add Kings of London caviar, an extensive no- and low-alcohol section, and a dedicated small-plates menu designed for relaxed, social dining.
