RAD Hotels prepares to tell some ’Tales’ at Brig o’Doon House Hotel

Ayr’s Brig o’Doon House Hotel will officially open its new restaurant ‘Tales’ at the end of this month, emerging from a major refurbishment of the space – and extensive engagement with guests about the menu.

While construction work was being finalised on a purpose-built wraparound extension with views over the River Doon, the hotel, which joined The RAD Hotel Group in 2022, hosted a series of taste sessions in its ballroom to help influence the final dining experience.

A public call-out attracted thousands of responses from Ayr to Edinburgh, and the 80 chosen guests were then invited by the RAD Hotel Group’s executive head chef Ian Ferguson and co-owner Vivien Kyle, to sample conceptual dishes and drinks, and offer their feedback to refine the opening menu.

Brig O’Doon House Hotel benefits from some cracking scenery

The new restaurant’s name, Tales, is said to draw inspiration from the storytelling heritage of Robert Burns, who penned some of his most iconic works nearby on the famous Brig bridge.

The newly extended dining space has doubled the restaurant’s capacity to 90 covers, housed behind floor-to-ceiling windows looking out to the local scenery.
The interiors are being personally curated by Kyle and at opening will feature ‘earthy tones, soft textures, and rich furnishings’, alongside a hand-painted mural, bespoke art, and sculptural lighting.

The space also includes booths, a private dining room, and an all-seasons outdoor terrace perfect for summer drinks and alfresco dining.

Chef Ferguson said: “Coming back to Brig o’Doon after 25 years feels incredibly special, and to launch a restaurant like Tales here is a real honour.

“These Taste Sessions were a brilliant way to connect with our guests and the local community, and their feedback has helped shape a menu that celebrates the best of Scottish produce while telling a story with every dish.

“We can’t wait to welcome everyone through the doors and share what we’ve created.”

Tales officially opens to the public at 5pm on Friday, 29th May, and will operate seven days a week thereafter.
