
Continuing to assert its identity in Glasgow’s west end, the Hinba Group has unveiled rebrand and refurbishment plans for the 88 restaurant unit on Dumbarton Rd.
The site, which was previously home to the much-loved Two Fat Ladies restaurant, will close for refurbishment on 21 February with the intention of reopening on 4th March with a refreshed look, updated facilities and a new identity – Tusco.

Hinba Group owner Fergus McCoss explained: “The rebrand reflects both a visual refresh and an evolution of the concept – it felt like the right time for a change of name and a fresh start so the restaurant will now be called Tusco, which is butchering a Spanish phrase which means ‘just do as you please’.
“My best friend from Spain called his dog Tusco and the name always stuck with me. I loved the sound of it, and I loved the meaning behind it too.
“While Tusco will not be a Spanish-style restaurant, its name will suit the relaxed, welcoming bistro vibe we’re trying to create,” said McCoss.

“People want flexibility when they eat out now. They want to try more things, share plates and build their own experience.”
McCoss revealed that Tusco’s food will actually be Italian inspired, offering sharing plates, pasta and cocktails, based on quality ingredients and ‘great cooking’.
“We’ve got a fantastic team already in place and they’re staying. The big changes are visual, new décor, upgraded toilets and a refreshed feel throughout the space.
“It will be business as usual throughout the refurbishments at our coffee shop Hinba next door at number 86 Dumbarton Road, but it will start to serve brunch on a Saturday and Sunday and evolve into a cocktail bar in the evening,” he added.

“You might want to drop in for a coffee, brunch or a cocktail at Hinba, or book in for a full meal at Tusco, they will be different experiences, but they’re part of the same idea of relaxed, informal hospitality where people can come and go as they please.”
The Hinba hospitality group has been growing of late, and now operates multiple venues across Glasgow and Argyll, including Hinba Specialty Coffee, Ziques Hinba and The Bakery Hinba.
