Michelin guide recognition for The Three Chimneys at Talisker

Less than two years after opening on the Isle of Skye, The Three Chimneys’ sister restaurant, The Three Chimneys at Talisker, has earned recognition in the Michelin Guide for Great Britain and Ireland.

Opening in spring 2024, this collaboration between The Three Chimneys and Skye’s oldest distillery, Talisker, on the shores of Loch Harport, introduced the concept of the ‘gastro-distillery’ to the island.

Inspiration for its menus is taken from the Talisker Distillery’s location on the Minginish peninsula amid air that is ‘filled with the salt and spray of the sea’. Dishes complement the maritime character of Talisker with its notes of smoke, spice, peat, salt and pepper.

Led by head chef of The Three Chimneys Paul Green and his team, The Three Chimneys at Talisker’s a la carte menu for 2026 will include freshly caught langoustines, oysters, mussels and scallops, as well as locally cured meats and cheeses.

Its early inclusion in the Michelin Guide now seals this second venue’s reputation as a world-class food and travel destination.

Chef Green said: “We’ve been overwhelmed by the fantastic response to The Three Chimneys at Talisker dining experience since launching the venture with the distillery in spring 2024.

“Earning our place in the Michelin Guide just two years later is a huge achievement and is testament to the continued dedication and passion of our team, as well as support from all our local suppliers.

“The ethos of both the Three Chimneys and Talisker are rooted in local produce and the communities that make the Isle of Skye,” said Green. “With this in mind, The Three Chimneys at Talisker will continue to celebrate the best of Skye, Land and Sea.”

It has already been suggested that The Three Chimneys at Talisker collaboration ‘provides a blueprint for success that other distilleries should take note of’, with global travel guide Lonely Planet naming Skye as one of the ‘best epicurean regions’ in Europe, alongside Tuscany, Piedmont, and Copenhagen.

Talisker brand home manager Leigh Aitken added: “The Three Chimneys at Talisker has added an exciting element to the distillery experience for our guests – an element few other distilleries can match.

“The restaurant and distillery are both an embodiment of what makes Skye, Skye, and this achievement is recognition of the exquisite quality and careful craftsmanship that makes a visit for foodies, whisky fans and people who love to sample the best of a place, simply unmissable.”

The Michelin Guide inspectors said: “This restaurant on the western side of the island has an enviable location in more ways than one. Firstly, it’s on the edge of Loch Harport and comes with glorious views, and secondly, it’s right by the Talisker distillery – making a pre- or post-lunch tour a must for whisky enthusiasts.

“With Skye’s waters offering so much super produce, it’s no surprise to see plenty of seafood on the menu, but also expect meat dishes from local venison to traditional haggis, neeps and tatties. Talisker whisky is of course a feature and you can even have a wee dram poured over your oysters.”
