Finnieston fine diners asked to place their Trust in Chef Modou Diagne

Critically acclaimed Chef Modou Diagne is opening a new Glasgow restaurant next month, where diners will be asked to ‘surrender expectations’ and trust in the chef to choose what is served.

Modou is renowned for his innovative approach and success at his debut restaurant 111 by Modou in Kelvindale.

The new venture, named ‘Trust by Modou’, will open its doors in the Finnieston strip in early July, and is said to represent an evolution in Modou’s culinary journey, with a concept rooted in ‘creativity, spontaneity, and deep connection between kitchen and guest’.

“There will be no set menu,” declared the opening announcement. “Instead, diners will be treated to a dynamic, ever-changing tasting experience shaped entirely by Modou and his team, celebrating seasonality, bold flavours, and the power of storytelling through food.”

In return for having faith in Chef Modou, diners will get whatever five course menu he chooses to serve at £30pp – a price point built for repeat visits and returning fans.

Chef Diagne said: “This is the restaurant I’ve always dreamed of. Trust is about more than just great food — it’s about connection, surprise, and giving people a reason to come back not just for a dish, but for a feeling.

“I want people to walk through the door, let go of control, and simply enjoy what we’ve cooked and prepared for them in that moment.”

Modou, originally from Senegal, made his name climbing up the ranks from kitchen porter to head chef under his business and chef mentor Chef Nico Simeone, who then offered him the opportunity to establish his own restaurant brand.

His first restaurant 111 by Modou opened in 2020 and began the next chapter in the ‘remarkable story of a 19 year old who came to Glasgow by himself with only £200 in his pocket to look for an opportunity in life’.
