THE duo behind new Leith fine dining restaurant, Heron, have appointed a general manager for the venue.
Glen Montgomery, formerly of Restaurant Andrew Fairlie, will head up the front of house operations when the restaurant opens on 14th July, supporting founders and head chefs Tomás Gormley and Sam Yorke.
Montgomery was head sommelier at Restaurant Andrew Fairlie and has also worked at venues including Number One at The Balmoral and the Isle of Eriska Hotel.
Other appointments include bar manager Seoridh Fraser and Sara Mele, who has worked front of house at venues including The Witchery and Café St Honoré.
Heron will open for lunch Friday to Sunday and dinner Wednesday to Sunday. The a la carte menu features dishes including crab claw, tomato, gazpacho and strawberry; duck, honey, lavender and mustard leaf; and dark chocolate, fudge and raspberry. There will also be a three-course set lunch menu at the weekends, for £29.
Gormley and Yorke have worked at a number of top Scottish restaurants and earlier this year launched home delivered food service Bad Seeds.
