
Chef Paul Gunning, best known as the chef patron of Purslane Restaurant in Edinburgh’s Stockbridge district, will be the next culinary star to take part in a ‘Captain’s Table’ collaboration onboard Edinburgh’s luxury floating hotel, Fingal.
Gunning will be hosting the latest in this series of dining experiences on Friday 21 August, and creating a bespoke tasting menu delivered in partnership with Fingal’s own head chef, Pedro Barreira.

Gunning has more than 25 years of experience in professional kitchens, working in leading hotels and restaurants, including experience under renowned chefs such as Marco Pierre White.
Since opening Purslane in 2011, he is said to have earned widespread recognition for his commitment to quality, flavour, and warm hospitality, building a reputation for creating refined, seasonal Scottish cuisine that showcases the finest local produce and seafood.
In addition to Purslane, Gunning is also a co-owner of Dùthchas, a restaurant that celebrates Scotland’s natural larder and culinary heritage.
As part of the exclusive Captain’s Table dining experience onboard Fingal, guests are seated in The Bridge, the ship’s former command room turned private dining area, where the unique nautical surroundings help create ‘an evening unlike any other in Edinburgh’.

Permanently berthed in the historic Port of Leith, the Fingal’s Lighthouse Restaurant & Bar has earned its own reputation as a world class foodie destination since its re-launch as a luxury hotel in 2019.
Fingal recently retained two AA Rosettes for culinary excellence for the fourth year running.
