Glasgow’s remaining Six by Nico restaurant gets an AA Rosette

Six by Nico in Glasgow’s Merchant City has been awarded an AA Rosette in recognition of culinary excellence, cementing its position within Glasgow’s busy dining scene.

Founded by Glasgow chef Nico Simeone, the Six by Nico restaurants – now doing business on sites nationwide – have built a reputation for ‘redefining accessible fine dining through innovation, storytelling, and exceptional value’.

However, earlier this month, Simeone said he was seeking to ‘redefine his culinary identity’ with the launch of the stripped back new restaurant concept, Lennox, which has ousted Six By Nico from its popular west end site on Byres Rd.

But he has stressed that the Six by Nico location in Glasgow’s Merchant City would ‘continue to deliver immersive dining experiences’ in the style that originally made his name.

At the heart of Six by Nico’s concept is an ever-evolving six-course tasting menu, changing every six weeks.

Each menu draws inspiration from a distinct theme, destination, or concept—’transforming dining into an immersive journey that blends creativity with precision’.

This new AA Rosette award is said to highlight the restaurant’s commitment to quality ingredients, refined technique, and consistently high standards of execution.

Chief creative officer at Six Company, Andy Temple, said: “Receiving an AA Rosette for our Glasgow Merchant City restaurant is a fantastic achievement for the entire team.

“Our goal has always been to create something exciting, accessible, and memorable for every guest, and this recognition reflects the passion and dedication of everyone involved.”

Six by Nico Merchant City’s current six week menu cycle focuses on the tastes of Korea with a Seoul themed tasting menu.
