
Celebrity chef and TV host Matt Tebbutt is to be the first in a series of guest chefs coming to St Andrews to collaborate in Chef Roy Brett’s Ondine Oyster & Grill kitchen, within the Seaton House hotel.
Tebbutt, best known for presenting BBC’s Saturday Kitchen and as a judge on MasterChef The Professionals, successfully ran The Foxhunter restaurant in Monmouthshire for fourteen years with his wife Lisa, winning several awards including AA Restaurant of the Year.
On Tuesday 12th May, for one exclusive evening, he will join Chef Brett and his team to serve a five-course dinner, with champagne on arrival from de Burgh Wine.

Brett has a series of chef collaborations planned throughout the year, involving his culinary friends from across the UK each bringing their ‘character and individual flair’ to Seaton House.
Tebbutt’s Ondine guest shift menu features raw oyster, in Vietnamese dressing; mussel, garlic and Lardo flatbread to share; green and white asparagus, spiced shrimp brown butter, cured egg yolk; braised beef short rib, watercress purée, sautéed tarragon spring vegetables; and glazed Lemon tart, rhubarb and elderflower.
A feature of these evenings will be the opportunity to ask both Brett and his collborator questions following the meal – then all guests will be invited to the hotel’s Bow Butts Bar for drinks, together with the hosts and the team.
