“Taking notes from classics such as a daiquiri and gimlet this citrusy and refreshing cocktail is a showcase of my growth and progression in my career.
Through the weeds goes out to two people I hold close to my heart and have been through the weeds with me in my career and in my personal life. Not a specific memory, but years worth of accidentally wearing matching shirts and being mistaken for them behind the bar.

Each homemade ingredient in this drink goes out to these guys, from Morgan’s love of pickles and mint to Gavin’s love of something funky and umami. And it wouldn’t be my drink without including a couple of my favourite spirits – Havana rum and Crossbill gin.”
Through the Weeds:
• 45ml Havana Club Añejo 7
• 15ml Crossbill Green
• 25ml miso syrup
• 30ml pickled lime brine
• Mint-infused Wray & Nephew spray and mint bouquet to garnish.
Shaken and double strained into an upcycled Nick & Nora glass.
