Successfully selling salad to Glaswegians sees Sprigg expand

Glaswegian salad and soup bar Sprigg is launching a fourth venue, this time in the city’s west end.

Sprigg on Byres Rd, in the former Park Hi Tea unit, is due to open at the end of this month.

Aiming to cater for Kelvingrove Park ramblers and university students, the new opening was described as ‘the final piece in the puzzle’ by Sprigg’s owner Tom McDermott.

“We’ve wanted to open in the West End for a long time and the opportunity finally felt right.

“This area is very different from the city centre. We’re used to serving office workers grabbing lunch quickly and heading back to their desks. Here, people move at a slightly different pace.

“You’ve got the parks, the students, the health and wellbeing community and people spending more time in the area. It feels like a really natural fit for Sprigg,” said McDermott.

“This is the first time we’ve operated outside the city centre, so it’s a huge learning opportunity for us as a business.”

Sprigg opened its first salad bar on the city’s Ingram Street in 2018. McDermott and his team then weathered the impact of the Covid 19 pandemic, launching a second venue on Sauchiehall Street in 2021.

A third Waterloo Street venue cemented Sprigg’s status as a Glasgow favourite when it opened in September 2024.

If the business hits its target of £2m in revenue by 2027, the Glasgow-born outfit will have achieved 100% growth since opening their third venue.

McDermott said: “The focus has always been on the quality of the food and making sure people feel they’re getting value, while being able to choose exactly what they want.

“We keep the entry point accessible with smaller bowls, but we make sure everything is packed with quality ingredients.

“A big part of our brand is how people are treated. We look after our team, so the team looks after our customers. The atmosphere our staff creates is a big reason we’ve developed a cult following.”
