“Drawing inspiration from one of my earliest memories of hospitality, before I was behind the stick, this drink is based off a cocktail my family and I would have on holiday in Florida, called the Lava Smoothie.

Whilst the drink was delicious, it was the service that certified the memory. The bartender, Cecilia, looked after my family and I every evening and truly made it an unforgettable experience. We would come back night on night, and would be welcomed with open arms. We felt like friends not just customers. So much so that my parents still keep in contact with her today!

“It’s the kind of care and detail that separates a good bar experience from an elite one. This striking example of hospitality is one I’ve carried with me since my introduction into bartending, one I still strive to provide with every service.

The cocktail itself is long and tropical, exactly how a holiday should taste! The combination of rums transport you right to a beach-front bar. Yogurt and sorbet add roundness and texture with a perfect lactic tang. The cherry soda topping off the drink with wonderfully tart effervescence!”

Lava Lamp:

• 30ml yogurt-washed Planteray Stiggin’s Fancy

• 20ml Bacardi Coconut

• 25ml pineapple juice

• Top with Three Cents Cherry Soda (roughly 100ml)

• Garnish with homemade raspberry sorbet.
