How long have you been in the industry?

I have worked in the hospitality and licensed trade for over 30 years, building my career in leading bars and restaurants across London, Manchester, Alderley Edge, Edinburgh & St Andrews, establishing my own venues.

I have travelled for inspiration to the USA, LA, NYC, Europe & Scandinavia, working with incredible companies before starting my own business.

What is the best thing about working in the licensed trade?

The most rewarding aspect is creating spaces where people connect and make memories. Hospitality brings communities together — whether through a relaxed brunch, a celebratory dinner, or an inventive cocktail experience. I also take great pride in mentoring teams and helping people build exciting and sustainable careers in the industry.

I think that supplier connections and developing relationships with drinks brands and learning about different products and innovations is essential.

What challenges have you faced as a woman working in the industry?

Much of my early career was spent working in businesses led predominantly by men, and carving out my own path required resilience, confidence and determination.

As a female leader, I have had to continually prove my expertise while navigating the fast-paced, high-pressure environment of hospitality. However, these experiences strengthened my leadership style and reinforced my commitment to supporting and mentoring other women entering the industry.

Who have been the most influential mentors in your career so far, and what did you learn from them?

I have been fortunate to learn from a number of exceptional operators and colleagues throughout my career. Working in world-class venues taught me the importance of consistency, attention to detail, and delivering excellence at every level.

Equally influential has been the network of female colleagues and entrepreneurs who have supported and inspired me — reinforcing the value of collaboration, resilience and lifting others as you progress.

Among those who have most influenced me are my parents, Ken & Marge Dalton, who taught me the value of hard work and integrity; my granny who taught me how to cook; Tim Bacon, whose leadership and strategic thinking have shaped my approach to business; Tim Moss, who exemplifies operational excellence and mentoring with generosity; and Lynne Kennedy, Business Women Scotland, who has built a vibrant network of women entrepreneurs, demonstrating the impact of community, empowerment, and supporting others’ growth. Their guidance continues to shape both my professional journey and my values.

What advice would you give a young woman starting out in hospitality in 2026?

Believe in your ability and don’t be afraid to aim high. Hospitality offers incredible opportunities for creativity, leadership and entrepreneurship. Seek out mentors, build strong networks and never stop learning.

Stay adaptable, as the industry evolves constantly, and remember that resilience, passion and authenticity will set you apart. Create and develop your work system, gather your knowledge, build a toolkit of skills, and surround yourself with your best network of people.

Hospitality is about returning to a place where you are welcome, where your drive, energy, and talent can truly shine.
