New venue will open its doors in the former Coppertrees restaurant
THE team behind a new bar and restaurant in East Kilbride has announced that the venue will officially open on 17th December.
Ruby’s is the brainchild of operator Struan Barclay and former Crystal Palace and Scotland footballer James McArthur, who are looking to create a ‘vibrant, modern venue’ in the South Lanarkshire town.
Dishes will include Rosemary Panko-Crusted Mozzarella Stick with hot honey–lemon dressing and tomato sugo, Tuscan Slow Cooked Beef in a rich Chianti ragu with seasonal vegetables and the Warm Cookie Dough Skillet.
On the drinks side, the menu will feature a range of lagers, cocktails and non-alcoholic options that include speciality coffees.
The new venue has been created through the refurbishment of the former Coppertrees restaurant, and the new owners claim to have retained all the unit’s former staff as well as recruiting some new team members.
“James and I are thrilled to confirm our opening date,” said Barclay.
“The response from the East Kilbride community has been fantastic, and we can’t wait to open the doors in December and unveil the new venue. Ruby’s is designed to feel warm and inviting from morning to night, and we’re incredibly proud of what the team has created.”
McArthur added that the pair’s goal ‘has always been to create a space people genuinely enjoy spending time in, whether that’s for a casual coffee, a midweek meal or a weekend night out’.
“With the opening date now set, we’re looking forward to welcoming everyone and showcasing exactly what Ruby’s is all about,” he said.
