
Ex-Gleneagles chef Mandeep Saini is bringing his ‘bold Indian fusion’ to Edinburgh this month, opening a new East-meets-West dining experience in the Bruntsfield space that was formerly Tom Kitchin’s Kora.
Saina, famed for his Bombay Club Sunday Feast at Gleneagles, is calling his new restaurant Bombay Bistro. The launch menu will feature signature dishes fusing authentic Indian flavours with Scotland’s finest seasonal ingredients, like Beef Chettinad, Haggis Tikki, and Sirloin Boti, alongside a curated selection of specially imported Indian whiskies and wines.
Chef Saini said: “Opening Bombay Bistro in Edinburgh is something I’ve dreamed about for years.
“This city has such an exciting food culture, and I wanted to bring something fresh – authentic Indian flavours with a refined, modern twist. Our menu is all about comfort and creativity, dishes that feel familiar but surprise you.

“We’ve sourced incredible Indian whiskies and wines that you won’t find anywhere else in the city, and I can’t wait to welcome locals, visitors and anyone curious to explore Bruntsfield’s vibrant food scene.”
Originally from Bombay, Saini has over 15 years of international culinary experience. After honing his skills at top London hotels, he joined Gleneagles, where his inventive take on Indian cuisine became a firm favourite with guests.
Following his success there, Saini opened The Bombay Club in Auchterarder in 2023. The restaurant quickly earned critical acclaim, including Best Restaurant in Central Scotland in its opening year and Best Indian Dining Award at the SME News Scottish Enterprise Awards 2025.
