What was your background before setting up First Table? 

I’ve been building websites since I was 15, so technology has always been part of my DNA.

Before starting First Table, I moved to Queenstown and bought into a software development company, which we sold at the end of 2013. That gave me the freedom – and the itch – to start something new.

When did you set up the company and what was the thinking behind it? 

First Table started in 2014, inspired by a dinner out with my family at a French restaurant in Queenstown. They offered 50% off the first table of the night. Because of that, I ordered things I wouldn’t usually – frog’s legs included – and paired it with a nice bottle of wine.

What struck me was how smart it was for the restaurant: they filled the first table, had diners in the window for passing foot traffic, created atmosphere, and kickstarted the night. I realised this simple idea could be scaled into a win-win platform that benefits diners and restaurants. That was the start of First Table.

How does the site work for bar/pub/restaurant operators and how do they get involved?

It’s straightforward. Restaurants choose the days and times they want to offer their “first table” — usually early, like 5:00 or 5:30pm — and in return for offering 50% off food, they get early diners in the door. That atmosphere attracts walk-ins, boosts momentum, and helps the night flow.

There’s no cost to join and no lock-in contract. Diners pay a booking fee, and we take care of the tech, marketing, and customer service. It’s low-risk, easy to set up, and you can be live within days.

What are the benefits of working with First Table for Scotland’s bars, pubs and restaurants?

We’re a simple, proven way to fill those quiet early hours and turn them into valuable trading time. Operators can boost atmosphere, attract new customers, and do it without blanket discounting.

When did you expand the service into Scotland and how many operators are you currently working with up here?

We launched in April this year and we’re already working with 35 great restaurants in Edinburgh and 25 in Glasgow, with more joining every week. From much-loved local favourites to fine-dining spots, the reception has been brilliant. The hospitality industry here has been so welcoming.

Do you have any plans to expand outside of Glasgow and Edinburgh? If so, is there a timescale for that?

Right now, our focus is on building strong partnerships in Glasgow and Edinburgh. That said, we’re always looking at other Scottish cities and thinking about where we can make the biggest impact.

Our UK footprint is growing quickly, especially in the North — so watch this space.

You’re now dealing with venues across the UK. How does the standard of hospitality in Scotland compare to the rest of Britain? 

It’s outstanding. Warm, professional service, a strong focus on local produce, and a great balance of tradition and innovation. Glasgow and Edinburgh have a real buzz and a genuine sense of community.

You’re planning an event in Edinburgh in September. What can you tell me about it – what will be the format and who are you hoping will attend?

We’re really excited to be hosting “Grow with First Table” in Edinburgh this September. This will be our first trade-facing event in Scotland and a chance to connect directly with the thriving hospitality community.

The format will be a relaxed, early evening gathering with drinks, canapés, and a short informal talk from our team. We’ll share some of the success stories from restaurant partners already using the platform, give a behind-the-scenes look at how First Table works, and open up the floor for conversation, networking, and questions.
