Sodexo caterers celebrate first year at the Genesis Scottish Open

Heritage Portfolio, the events and catering company within Sodexo Live! is celebrating a successful first year at the 2025 Genesis Scottish Open.

Kicking off its three-year contract with the golf tournament, Heritage Portfolio served over 5000 hospitality covers, including within the Partners Pavilion and the Genesis Lounge, the event’s flagship hospitality restaurant.

In addition, the team also catered for DP World Tour operating areas, including the Media Centre, Players & Caddies Café and Greenkeepers.

Through a blend of on-site kitchens and their central production kitchen in Leith, Heritage Portfolio is said to have delivered a ‘best-in-class culinary experience’ to guests and participants.

Heritage Portfolio executive director Sandy Robson said: “Now in its 53rd year, the Genesis Scottish Open is a high-profile, internationally renowned golf tournament and we are thrilled to have catered for such a prestigious event.

“This contract underscores our capability to deliver premium hospitality experiences at scale, and showcases our expertise in the complex, fast-paced world of live events and sports catering.”

Elevating the tournament’s food offering, the menus in the Genesis Lounge were curated in partnership with Michelin-starred chef Tom Kitchin and award winning South Korean Chef Mun Kim.

This collaborative menu showcased Scottish produce, including hand-dived Orkney scallops and North Berwick lobster alongside traditional Korean recipes of Black Angus beef with Korean miso mushroom sauce and rice pudding with Korean fuji apples.

Serving this up en masse required an experienced operational team of more than 50 managers, chefs and front of house professionals, with support from the Sodexo Live! major events team.

All were on site from 29 June, with the first outlets open from 6 July ahead of championship play from 10 to 13 July. Supporting employment in the surrounding area, 120 staff were recruited locally.

The culinary team at Heritage Portfolio were led by executive head chef Paul Hood, who oversaw menu innovation and event dining.

Hood was joined by Stephen Frost, divisional executive chef at Heritage Portfolio, who was recognised with the Lifetime Achievement Award at the Scottish Excellence Awards for his extraordinary 52-year career in hospitality.
