Serving up the Duke of chips for the Royal Coronation

IT’S not just drinks brands that are getting on board with the upcoming Royal Coronation – potato supplier Lamb Weston is gearing up for the event with its chips brand The Dukes of Chippingdom.

To mark the historic event, the brand is promoting two different recipes to help outlets celebrate King and country with that most British of ingredients – chips. 

The Royal Brunch is a twist on the classic Eggs Royale. Substituting chips for the traditional English muffins, the recipe also includes fresh duck egg, smoked salmon and hollandaise sauce. 

Elsewhere, Charlie’s Churros is a British take on the Spanish dessert, using Dukes of Chippingdom chips as the base, topped with lemon curd, freeze dried raspberries, caster sugar, fresh raspberries and edible flowers to garnish. 

The recipe calls on chefs to blend the freeze-dried raspberries to a powder and combine it with the caster sugar. 

The chips are then fried in fresh oil coated in the sugar mix, with the fresh raspberries lightly coated in lemon curd and placed atop the chips. 

The – slightly odd, let’s face it – dessert is then garnished with edible flowers.
