Fife native returns to Fairmont

CHEF Ian Syme has returned to Fairmont St Andrews to oversee the resort’s five restaurants.

Syme, who has spent the last three years at another luxury Scottish resort, Gleneagles, has previously worked at Fairmont as an executive sous chef. His career has also seen him serve a stint as head chef at St Andrews restaurant Seafood Ristorante.

Originally from nearby Anstruther, Syme joins the resort as it prepares to host qualifying rounds for the Open, before the tournament itself takes place at the Old Course in St Andrews later in the summer.

“It is a fantastic time to be coming back to Fairmont St Andrews, ahead of what may be our busiest summer on record,” said Syme.

“I am so looking forward to seeing some familiar faces, and meeting some new ones, as we further develop our staff team and our fantastic food offering.”

Fairmont general manager, John Keating, said Syme was being met with “a very warm welcome” from the team as he returned to the five-star resort.

“We are so looking forward to his fresh take on development, training and enhancing our offering as we look ahead to what we hope will be a busy and successful season,” said Keating.
