THE operator behind Edinburgh restaurants The Kilted Lobster and Whisky Forager will open a new whisky and gin bar in the Scottish capital next week.
Tipsy Midgie, a 30-seat bar on St Leonard’s Hill in the Pleasance area of Edinburgh, will specialise in craft gins as well as a selection of “old and rare, unicorn, distillery exclusive” whiskies. The venue is the brainchild of Colin Hinds, who previously operated The Kilted Lobster restaurant in Stockbridge, which was later relaunched as Whisky Forager.
The drinks offer at Tipsy Midgie will include a Gin Perfect Serve menu showcasing Scottish gins paired with seasonal garnishes and mixers along with a Whisky Hyballs menu featuring a selection of long whisky serves.
There’s also a range of ‘can and a dram’ options – a spin on the traditional Scottish ‘hauf and hauf’ – and regular whisky-themed events, including Chocolate Pairing Tuesdays and Distillery Discovery Thursdays, which will see brand ambassadors, master blenders and tour guides invited to speak about whisky. On Sundays the venue will host Flight Club Sundays, where different whisky flights will be compiled based on distinct themes. The Tipsy Midgie will open Tuesday to Sunday, 12pm till 12am.
