FRESH Scottish seafood will be the focus when a new bar and restaurant opens its doors at Glasgow hotel Kimpton Blythswood Square.
Iasg – which takes its name from the Gaelic word for fish – will officially open on Monday, 15th November. In addition to serving locally-sourced seafood the venue will host live DJs at the weekends, with the opening weekend featuring sets by Ashley Beedle and LaFontaines frontman Kerr Okan.
Kimpton Blythswood Square general manager, Mafalda Albuquerque, said the restaurant will adopt a “progressive sustainability policy” for sourcing its seafood.
“We’ll be serving only hand-dived or creel-caught shellfish, sourced in waters where there is a healthy supply, and promising to work with their suppliers to guarantee traceability,” said Albuquerque.
“Iasg restaurant will also be donating £1 from every bill to The Firth of Forth Lobster Hatchery, a conservation and educational charity and the only operating hatchery in Scotland, working to repopulate lobster stocks at North Berwick harbour.”
