Scottish chef returns to his roots

SCOTTISH-born Mark Donald has returned to his roots after being appointed head chef of Michelin-starred Number One at The Balmoral.

The chef’s homecoming follows a 13-year stint abroad, most recently at Bentley Restaurant and Bar in Sydney.

In his new role, Mark oversees a team of 13 chefs at Number One and has created a menu “inspired by Scotland and flavoured by his and the team’s international travels”.

Jeff Bland, executive chef at The Balmoral, said: “Mark will take Number One to new heights as he respects the restaurant’s ethos of continually innovating and surprising our guests.”
