Eden Mill to open bar in Glasgow

ST Andrews-based Eden Mill has chosen Glasgow to launch its first bar.

Jax will open in the city’s Princes Square as part of a new development which will also be home to Eden Mill’s Blendworks experience; it already runs a Blendworks at the Macdonald Rusacks Hotel in St Andrews, which gives consumers the chance to learn about the gin-making process and create their own spirit.

The new Glasgow outlet will occupy the former Buzzy Wares venue on the ground floor of Princes Square. Jax will major in spirits and cocktails designed by Eden Mill’s distillers, alongside a bar food offer; while the adjoining Blendworks experience, which bar customers will be able to see into, will give consumers the opportunity to create their own spirits. There will be trade sessions too.

Eden Mill co-founder Paul Miller said the two elements of the new venue sit well together.

“One of the advantages for us in having Blendworks and a bar is the excellent product development feedback,” he said.

“At Blendworks we’re seeing what people want to create and we understand where trends are going.

“We’ve recruited gin experts, including Heriot-Watt graduates; I’m really excited about the talent they have. And we hope that Blendworks will be a real destination and drive footfall; we’ve seen that in St Andrews.”
