Collaboration brings pop-up bar to Edinburgh hotel

ST Andrews-based distillery Eden Mill has created a pop-up gin bar in the Waldorf Astoria hotel in Edinburgh.
Launched last month in the hotel’s Caley bar, the ‘Gin House at The Caley’ is open to hotel guests and visitors alike until October.

Said to have been inspired by Eden Mill’s own distillery in St Andrews, the ‘Gin House’ is “bringing the Eden Mill experience to the capital”, with a menu offering signature cocktails created by the team at The Caley Bar and Eden Mill.
Featuring Eden Mill’s four core gins, the menu includes a range of gin serves, including an Oak Negroni, a Hoppy Collins, a Turkish Delight and a Rositio tipple.
There is also a Waldorf Astoria Edinburgh speciality chilli and ginger gin, created for the venue by Eden Mill.
As well as these serves, Eden Mill’s new range of pre-mix cocktails is on offer, including: Berry Bramble, Citrus Fizz, Roasted Martini and Basil Smash.
Taking inspiration from Eden Mill’s own distillery, the ‘Gin House’ is decorated with a canopy of greenery and local botanicals that are said to have been sourced from around the distillery and used as ingredients for the selection of gins on offer.
With the pop-up bar in full swing until next month, it will play host to a series of cocktail and gin masterclasses, as well as a history of Eden Mill.
