Encore’s onward march continues with The Lyon on George Street

Edinburgh hospitality group Encore Bars has unveiled plans for a new flagship venue, The Lyon Public House, scheduled to open on George Street this August following a £1.5 million investment.
Encore promises that The Lyon Public House will take everything that people love about a traditional pub and rework it for a ‘more contemporary, experience-led setting’.

“Rooted in good food, good drinks and good company, the space is designed to evolve across the day, moving from a food-led environment into a lively late-night destination,” read the statement from the group, which also operates Freddy’s, Westside Rodeo, and Boston Bars in both Edinburgh’s new and Old Town.

Housed within a building that operated as an auction house for over a century, The Lyon Public House takes subtle inspiration from its past, with curated antiques and considered interior details nodding to the building’s history while introducing a refined, high-end finish.

Encore said that food sits firmly at the centre of the concept – alongside classic pub favourites, The Lyon will introduce a dedicated in-house bakery and pastry team, with a strong pie-led offering running throughout the menu.

There will also be a late-night pie shop window serving until 3am, and a standout Sunday roast.

Once completed, the venue will feature a series of distinct spaces, including a glass-fronted indoor/outdoor courtyard allowing ‘the energy of George Street’ into the space.

Further in, a lengthy bar and long hightop tables will be reminiscent of traditional Bier Halles, while a private room will be available for dining, events and viewing parties.

Live entertainment will also play a central role at The Lyon, with a rotating programme of performers across multiple spaces – and a ‘duelling pianos’ concept to ‘bring an interactive element that builds in energy as the evening unfolds’.

The drinks offering will feature 18 draught world beers, including rotating collaborations with independent brewers, alongside a wine list and bespoke cocktails designed to suit both daytime and late-night occasions.
