“This cocktail ties the revolutionary spirit of May 1968 with the intensity and passion of Gilles Caron’s photography. 

The combination of traditional Cognac and the herbal Green Chartreuse reflects the clash between old values and the desire for a new world, while the coffee embodies the drive, energy, and late nights of the protestors.

The cinnamon syrup adds a spicy kick, mirroring the heated atmosphere of the riots, and the bitters offer a touch of the disillusionment and resistance that marked the protests. 

The cream foam on top acts as a visual and textural contrast to the bold, intense base of the cocktail, much like how the May 1968 protests were a clash between the old and the new, the ideal and the harsh reality. 

The sweetness and creaminess of the foam soften the drink, but the espresso within it and the pinch of salt keep a grounded, slightly bitter edge—mirroring the complexity of both the protests and Caron’s photography.

This adds both an aesthetic and flavourful layer, giving the drink an inviting, rich appearance while still embodying the rebellious, passionate spirit of the May 1968 era.”

• 30ml cold brew coffee

• 15ml Mr Black’s Coffee Liqueur

• 10ml Cinnamon Syrup

• 1 dash Angostura aromatic bitters

• Topped with a cream foam (cream/coffee/salt).
