Scotland has a new fine dining destination with the launch of ‘1635’ at the newly refurbished Knipoch House Hotel, which is now part of the Sonas Collection.

Under the creative leadership of Chef Andrew Engledow, 1635 is offering a seven-course, high-end Scottish dining experience, utilising local ingredients and ‘seasonal flavours’ from across the country.

Chef Engledow joined Knipoch House Hotel from the Duisdale House Hotel in Skye, bringing his expertise in local sourcing and innovative cuisine.

The launch ‘Taste of Scotland’ menu is described as a tribute to the nation’s diverse culinary heritage, featuring Shetland scallops, Argyll venison, Orkney halibut, and Tain cheddar.

Engledow said: “1635 is my personal interpretation of how I would enjoy a Scottish kitchen. The menu reflects Scotland’s natural beauty and culinary tradition, while also embracing modern techniques and creativity.

“By working with the best seasonal ingredients sourced from Argyll and beyond, my vision is to deliver a true taste of Scotland, with every dish offering something unique for the palate.”

The restaurant’s name is a reference to the historic roots of Knipoch House Hotel, which dates back to the 16th century. The name ‘Knipoch’ is derived from the Norse for ‘hilly place,’ a reminder of the Viking influence in the area.

A plaque mounted on the wall, embossed with a crest emblem and the year 1635, was originally located on the front of the house for tax collection purposes.

Local legend has it that Robert the Bruce battled in the nearby hills, while the ancient Road of the Kings, used by Scottish monarchs journeying to their final resting place on Iona, passes close by.

The hotel also bears the mark of the notorious 1591 murder that later inspired Shakespeare’s Macbeth. The tale of betrayal and intrigue, involving feuding members of Clan Campbell, remains etched in the stones of Knipoch, offering a rich historical setting for a contemporary culinary experience.

Knipoch House Hotel became part of the Sonas Collection in early 2024 following a £1 million renovation. The property has been restored to preserve its original charm, featuring stone walls, fireplaces and wood-panelled interiors, while enhancing the guest experience with modern comforts such as super king-sized beds, luxury fittings and a hot tub.

Set against the backdrop of Loch Feochan, the hotel offers a peaceful retreat for guests with stunning views from its Loch View Terrace.

The Sonas Collection was founded on the Isle of Skye by Anne Gracie-Gunn and her late husband Ken, born from a shared love of sailing the Hebridean waters and Gaelic culture. More than 20 years later, Anne continues to lead the family-run group, aiming to provide guests with authentic Highland hospitality.
