Vietnamese street food restaurant Pho will open a new location on Edinburgh’s Lothian Road this month.
The upcoming restaurant will be Pho’s third site in Scotland, following the success of its first Scottish venue in Edinburgh’s St. James’s Quarter, and the central Glasgow location on Renfield Street that opened earlier this year.
Founded by husband-and-wife team Stephen and Juliette Wall, Pho’s menu focuses on ‘aromatic, nutritious and delicious rice noodle soups and stunning variety of Vietnamese street food’.
In the unit that was previously Wildwood, Pho’s new Edinburgh restaurant will accommodate 100 covers for its menu of street food, including fresh summer rolls, savoury and spicy curries and wok-fried noodles, alongside a variety of pho – like classic beef brisket noodle soup in 12-hour bone broth, healthy ‘supergreen’ soup or a hot and spicy prawn noodle soup.
As the national dish of Vietnam, pho is known for its balance of twelve-hour broths, lean meats and fresh herbs and spices, variously described as the ‘perfect day-after saviour, cosy comfort food and wholesome pick me up’.
Marketing director Libby Andrews said: “With such an incredible response to our first Edinburgh location, we’re thrilled to be opening a second restaurant in the Scottish capital, welcoming more guests to enjoy our warming soups just as ‘Pho Season’ begins.”
