Scotland’s capital has ‘a bold, new culinary destination’ following the multi-million-pound renovation of The Caledonian Edinburgh.
This month, the hotel is unveiling its new food and drink destination, The Court, which is said to embody the history and character of its past, by combining vintage luxury and mid-century design.
The transformation to the food and drink offering is the latest of the largescale developments to the hotel wrought by Henderson Park’s £35 million investment in renovation and the hotel’s transition to join Curio Collection by Hilton.
Housed amongst The Court ‘s ‘exquisite and original heritage features’, there’s a grand cocktail bar, a terrace for dining, a patisserie, a lounge and a live music stage.
The all-day dining menu has been curated in collaboration with chef, Mark Greenaway, using seasonal Scottish ingredients with local provenance. The Court’s staples will include their fresh Scottish Lobster Roll and 16 Layer Carrot Cake.
The Court patisserie will serve signature pastries like its Pistachio Croissant, and the Caledonian’s seasonally-themed Afternoon Teas – debuting its ‘Timeless Classics’ Afternoon Tea upon opening.
The Court’s cocktail bar will take centre stage, drawing inspiration from the iconic 123 train, the fastest steam train associated with The Caledonian railways, casting back to the hotel’s own history as a railway station.
The bar will host a selection of signature cocktails, and one-of-a-kind serves, collaborating with local suppliers, and incorporating sustainable, climate positive spirits.
The stage will feature a weekly music programme of performers entertaining diners from a carefully placed vantage point, which allows sightlines from all corners of the 100-seat bar, terrace and lounge.
The Caledonian has collaborated with several key partners to bring thius space to life, including its in-house hospitality operator and asset manager, Klarent Hospitality, Henderson Park, as well as Hilton and Edgewater.
The branding and identity of the venue has been conceptualised by The Gorgeous Group and architectural design shaped by Cunningham Mclean.

At the west end of Princes Street, within sight of Edinburgh Castle, The Caley has been part of the social fabric of the city for over a century, welcoming guests from all over the world and hosting famous faces such as Her Majesty the late Queen Elizabeth II, US President Barack Obama, and musical legends Roy Rogers and Gene Kelly.
