Skye icons unite for ‘Three Chimneys at Talisker’ pop-up

Skye’s world-renowned Three Chimneys restaurant and the island’s oldest distillery, Talisker, have joined forces to create a pop-up dining experience at the distillery’s new waterfront space on the shores of Loch Harport.

The concept for ‘The Three Chimneys at Talisker’ was developed by restaurant’s head chef, Scott Davies, and general manager, Krzysztof Dudkowski, to celebrate local provenance and sustainability, and their commitment to Skye’s growers, crofters, producers and craftspeople.

Davies has crafted ‘The Journey’, a bespoke tasting menu inspired by Uisge Beatha, which aims to highlight the distinctive maritime character of Talisker whisky while also harmonising it with the diverse, seasonally influenced fare of Skye.

Dishes on this menu include Dulse tea, Orbost herbs and seaweed; fermented risotto, malt, wheat grass and toasted yeast; roasted double dived scallops, langoustine tartar, caviar and chawanmushi; whisky barrel smoked venison, haggis, barbecue celeriac and whisky bone sauce; and single origin chocolate, Skye salt, toffee, dates and Sichuan pepper ice-cream.

On The Journey pescatarian menu, items include whisky barrel smoked catch of the day, greens, barbecue celeriac, with Talisker 10 Year Old burnt sauce; and Talisker storm whisky ganache, brown butter and black pepper madeleines.

A seasonal and ‘lighter fare’ menu caters for all dietary requirements and is available to walk-in guests only, offering freshly shucked oysters; warm seafood bisque; beef fat tacos; slow cooked, smoked and spiced Vatten Croft beef shoulder; and spiced, alder hot smoked salmon.

The pop-up’s special cocktail menu features a whisky sour made with Talisker 10 Year Old, lemon, sugar, and egg white; and Sherry Cobbler made with Manzanilla Sherry, Talisker Storm and sugar syrup.

The Three Chimneys at Talisker will be open seven days a week from 12pm to 4pm until the end of April. The distillery’s new waterfront venue provides space for up to 40 diners.

Some 40 minutes drive north-west up the island, The Three Chimneys Restaurant itself has a rich history ‘stemming from humble beginnings which date back to 1968’. A five-star AA restaurant, it has retained three AA Rosettes for over two decades and is included in the Michelin Guide for Great Britain and Ireland, and the Good Food Guide.
