GLASGOW chef Modou Diagne will take the next step in an amazing personal journey next month when he opens the doors of his own restaurant.
Having arrived in Glasgow from Senegal in 2013, Diagne initially slept rough before finding refuge through a charity. A year later he applied for a job with chef and operator Nico Simeone as a kitchen porter.
Earlier this year Simeone decided to turn the restaurant – 111 by Nico in Glasgow’s west end – over to Diagne.
Though the reopening was halted by the coronavirus pandemic the restaurant will reopen its doors in August as 111 by Modou. Guests will be able to choose between a four or six-course seasonal tasting menu priced at £30 or £35 respectively, or a five-course ‘total trust’ menu for £23 and which is designed by the chef on the day.
