Fairlie scholarship finalists revealed

THE six finalists who will compete for the inaugural Andrew Fairlie Scholarship have been revealed by the Hospitality Industry Trust (HIT) Scotland.

Abbie Clunie of Craig Millar @ 16 West End in St Monans, Emma-Rose Milligan of Chez Roux at Inverlochy Castle, Jake Hassall of the Pompadour in Edinburgh, Joseph Harte of Douneside House in Aberdeenshire, Ryan McCutcheon of Greywalls Hotel and Chez Roux in Edinburgh, and Peter Meechan of the Strathearn Restaurant at Gleneagles will compete in the final on October 24 for the chance to win the scholarship, which was launched by HIT Scotland in memory of the Michelin Star chef, who passed away in January.

The final, to be held at Gleneagles, will see all six competitors’ skills tested by a panel of judges that includes national chef Gary Maclean and Stephen McLaughlin, head chef at Restaurant Andrew Fairlie.

McLaughlin said: “It was fantastic to see so many chefs in Scotland with such an obvious passion for food and an appetite for learning. It wasn’t an easy decision, however the final six are all there on merit.

“They were selected for their understanding of the ethos of Andrew Fairlie’s culinary traditions; the essence of this included how they talked about themselves and their culinary ambitions, and how they created their menu.”
