AN Edinburgh hotel has marked its 200th birthday with the release of a new gin.
Staff at the Apex Waterloo Place Hotel raised a glass of The 1819 gin, which was created by eight of the hotel’s employees in collaboration with Eden Mill, to celebrate two centuries of business.
Bar staff also created five cocktails to showcase the spirit, which is inspired by one of the hotel’s most notable guests, botanist Asa Gray, who frequented the hotel in the 1800s.
GM Alan Harbisher said the new spirit “seemed a fitting way to not only celebrate the hotel’s anniversary, but give a nod to one famous guest in particular – botanist Asa Gray – whilst marking the day with one of the world’s trendiest tipples”.
