SIGNATURE Pubs, the Edinburgh-based operator with more than 20 units across Scotland, is set to open a new bar, restaurant and brewery in Edinburgh’s Grassmarket.
Cold Town House is located in the former Robertson Memorial Church. Signature invested £4 million on the refurbishment of the site, which included the addition of a new rooftop terrace in addition to the installation of eight beer tanks, where the company’s own Cold Town beer will be brewed.
Opening every day at 9am, the venue will offer locally-sourced food and drinks as well as live entertainment.
Signature Pubs owner, Nic Wood, said: “This project has been a long time in the making and we’re delighted to finally have an opening date for Cold Town House.
“We launched Cold Town Beer in 2018 and it has gained a loyal following; we’re thrilled with the progress. We’re looking forward to being able to share the Cold Town magic with everyone in this incredible new venue.
“Cold Town House is something completely new for Edinburgh and we’re excited to bring this iconic building back to life, as well as restoring the Grassmarket’s history of brewing beer.”
Cold Town House will open before the end of February.
