QUIET Man Taverns, the Edinburgh-based pub and restaurant operator, has named William Thomson as its first group executive chef.
Thomson (pictured front and centre) joins the company from Barony Castle in Peebles, where he had been head chef for five years. He has previously held positions at Rufflets Country House in St Andrews, the Caledonian Hotel in Edinburgh and ocean liner the QE2.
Thomson is also a former winner of VisitScotland’s Taste Our Best award and Food Safe Scotland’s Eat Safe award.
At Quiet Man Taverns, Thomson heads a team of nine chefs, six of whom are based at The Perch restaurant on Hanover Street, which the group purchased late last year.
The company’s estate also includes Scotsman Lounge on Cockburn Street and The Kilted Pig in Colinton.
