Cultivating new organic brews

A BREWERY specialising in organic beers is one of two new businesses set to join a growing number of producers at a food and drinks ‘hub’ in Fife next month.

Located at Balcaskie Estate, in Anstruther, Bowhouse first opened in July 2017 with the aim of creating a dedicated space for smaller operators and a more direct link between producers and consumers.

The new brewery at Bowhouse will be operated by Lucy Hine and Stephen Marshall from East Neuk Organic Brewing & Distilling Ltd, who plan to create a small range of “nourishing, organic beers” at the site, inspired by the nearby coastline under the name ‘Futtle’.

As well as utilising organic grains from the fields of Balcaskie, on the doorstep of the brewery, Hine and Marshall plan to focus on farmhouse styles, experimenting with wild yeasts and “spontaneous fermentation”.

Also opening in September is Scotland The Bread, a collaborative project which aims to establish a Scottish flour and bread supply that is “healthy, equitable, locally controlled and sustainable”; the grains will be milled and sold as speciality flours.
