Michelin star chefs open brasserie in Edinburgh hotel

CELEBRATED chefs – and father and son team – Michel and Alain Roux have opened a new venture in Edinburgh’s Balmoral Hotel.

Combining quality Scottish produce and classic French cooking, Brasserie Prince by Alain Roux opened on June 11 in the Rocco Forte-owned hotel’s Hadrian’s Brasserie and The Balmoral Bar.

The brasserie’s launch marks the completion of a five-year refurbishment programme at the hotel, which has taken in The Balmoral’s Michelin-starred Number One restaurant and whisky bar Scotch.

The 210-cover Brasserie Prince will be led by Alain, who has taken the role of  signature chef at the new venture; he currently holds three Michelin stars at The Waterside Inn in Berkshire – the only restaurant outside France to have retained that status for over 30 years.

Alain said: “This exciting new brasserie will be defined by a seasonally changing menu rooted in French bistro dishes, irresistibly simple, delicious food.

“It will be a menu informed by my French heritage but totally inspired by Scotland.”
