A former Gleneagles restaurant manager and owner of Edinburgh bar 99 Hanover Street, Juan Jose Castillo Castro, is set to open his first eatery in the capital later this month.

83 Hanover Street will offer a menu of small plate dishes which showcase Scottish ingredients and are inspired by Chilean and Swedish cuisine.

The 50-cover restaurant will focus on bespoke charcuterie, created by East Coast Cured, which will hang on display at the open kitchen and bar.

A selection of wines from Europe and South America, which are selected by Peter Brodie, former restaurant manager at Timberyard, will accompany the food.
