Gin embraces the water of life

Elgin-based distillery launches Speyside’s first cask finish gin

A DISTILLERY in Moray has launched what’s claimed to be Speyside’s first cask finish gin.

Elgin-based Moray Distillery, which produces Avva Scottish Gin, is behind Avva Cask Finish – a limited edition 55% ABV gin produced to honour the region’s rich whisky heritage by blending the flavours derived from bourbon casks with London Dry gin.

It has been many months in the making – starting with sourcing the perfect quality cask.

The gin was created by combining the 11 native and traditional botanicals used in Avva, five of which are said to be foraged locally by Avva founder Jill Brown – rowan, red clover, mint, dandelion, and nettle; the spirit was then matured in a bourbon barrel, handpicked by manager Malcolm Munro from the Speyside Cooperage, for six months to create Avva Cask Finish.

The resulting cask finish gin is described as “a wonderful complex of flavours”, including juniper, floral, and citrus notes combined with vanilla and cream drawn from the bourbon cask, and “a rich spiced finish”.

The cask finish gin is said to be the first of its kind to have come out of Speyside

Commenting on the release of Avva Cask Finish, Jill Brown said: “It has been many months in the making – starting with sourcing the perfect quality cask back in January to distilling and maturing the spirit until the complement of flavours was just right.

“Avva is based on a strong ethos of history, provenance and family. I wanted it to be everything a small-batch craft gin should be.

“We do everything ourselves here – each bottle is hand-filled and labelled at the distillery.”
