Bistro Deluxe by Paul Tamburrini will open in Edinburgh this autumn

SCOTS chef Paul Tamburrini is to launch a new bistro in an Edinburgh hotel after joining forces with Macdonald Hotels & Resorts.

Bistro Deluxe by Paul Tamburrini will open in the Macdonald Holyrood Hotel this autumn following a £250,000 investment.

The 80-cover eatery will major in Tamburrini’s signature blend of French cuisine using Scottish ingredients, offering a “creative” menu of dishes based around local and seasonal produce and a contemporary wine and drinks list.

Tamburrini – who trained with Marco Pierre White at L’Escargot in London before going on to work in Glasgow restaurant Rogano, Cameron House at Loch Lomond, Hotel du Vin at One Devonshire Gardens in Glasgow, where he was executive head chef for five years, and Martin Wishart’s The Honours restaurant in Edinburgh, where he was he was chef director – said opening the new bistro is a “once in a lifetime opportunity”.

“Being part of a hotel environment is second nature to me and I’m very proud to be taking this next step in my career,” said Tamburrini.

“I’ll be recruiting a team of talented chefs and I’m looking forward to creating a progressive and forward-thinking restaurant.

“I’ll be crafting the menu based on seasonality and using the best local suppliers and producers with a level of service to match the food which will rival any restaurant in the country.”

Ruaridh Macdonald, deputy chief executive of Macdonald Hotels & Resorts, which operates 45 hotels in the UK,  said: “It will be a superb dining experience and once established, we have ambitions to build on what will undoubtedly be a successful venture by rolling it out in some of our other hotels across the UK.”
