Chef cooks up old beer recipes

AN Edinburgh chef is bringing some historic Scottish dishes back to life through a series of recipes designed to be paired with beer.

The recipes, from Mark Greenaway of Restaurant Mark Greenaway, feature ingredients that would have been used in the 1500s and are designed for consumers to try at home.

Dishes such as ‘Reekin Fat Hen’ and ‘Mackerel Two Ways’ are among those Greenaway has paired with beer.

The recipes were created in collaboration with Tennent Caledonian and Tennent’s Beer aged with Whisky Oak underpins each dish.
