Jolly gin giant arrives in the capital

A NEW gin bar has launched in Edinburgh’s west end following a £730,000 root and branch refurbishment.

The Jolly Botanist opened in the former Spider’s Web on Morrison Street earlier this month and represents a joint investment by Star Pubs & Bars and Edinburgh operators Iain Pert and Gordon Gilhooley of PG Taverns Scotland, whose portfolio includes McSorley’s on Clerk Street and the Cask & Still on Leith Walk. The new gin bar is said to represent the pubco’s largest-ever single site investment in Scotland.

Iain Pert
Iain Pert said gin is the “drink of the moment”. The bar stocks a range of 70.

The Jolly Botanist stocks more than 70 craft and small batch gins, 14 of which are Scottish, as well as cask ales and premium lagers.

Designed by Kirkcaldy-based DBP Architects, the interior is said to have a “quirky, relaxed living room feel”.

Iain said: “The Jolly Botanist is a combination of some of Edinburgh’s best attributes – its world famous botanical gardens and long gin and ale heritage and the city’s irreverent sense of fun.”
