THE Horseshoe Restaurant in the Scottish Borders has appointed a new sous chef.
Darren Miranda joins the Eddleston eatery from the five-star boutique property Links House, in Dornoch, where he was head chef.
Miranda studied at the Escuela Superior de Restauracion in Madrid. He also spent three years as sous chef under Michelin-starred chef Charlie Lockley, at Boath House in Nairn.
Miranda joins head chef Alistair Craig at the restaurant. He said joining Craig’s team will “give me a chance to do what I love and an opportunity to be part of a restaurant that clearly knows where it is going”.
