A FORMER sous chef of Edinburgh hotel The Bonham has returned to head the kitchen.
Maciej Szymik, originally from Poland, has re-joined from The Marine Macdonald Hotel in North Berwick.
Szymik was sous chef at The Bonham in 2006 and has since worked at Inverness restaurant Abstract and The Arch Inn in Ullapool, where he was chef/proprietor.
Szymik said he planned to continue the tradition of using local, seasonal produce at The Bonham.
“I am passionate about adapting classic flavours for the modern palate to produce dishes that are simple but elegant,” he said.
“The Bonham’s reputation is first class as a destination that provides a unique and memorable guest experience, and this is recognised by the many awards it has won. I feel privileged to be a part of this team.”
