Calculator can help operators save

VISITORS to trade show ScotHot earlier this week got the chance to see how much they could save by cutting carbon emissions.

The ‘Save and Sustain’ online calculator was developed by the Responsible Hospitality Partnership (RHP) in conjunction with event organiser Fresh Montgomery, and provides users with advice on how they can generate savings in four key areas: water, training, waste and lighting.
The tool has previously featured at other Fresh Montgomery exhibitions and will be available on the RHP website by the end of this month.
“Around two-fifths of consumers are swayed by sustainability issues when selecting products and services,” said Dr Rebecca Hawkins, managing director at Oxfordshire-based Responsible Hospitality Partnership.
“So making a sustainable choice can improve your image as well as provide multiple opportunities for cost reduction.
“Our online calculator will help, for example, Scottish hospitality businesses prepare for The Waste (Scotland) Regulations 2012, which include the requirement that food production, food retail or food preparation businesses – producing over 50kg of food waste per week – must separate it for collection by 1 January 2014. With Save and Sustain we want to give operators a practical way to calculate the full benefits of sustainability, and especially highlight how much it can add to profitability.”
